After all the sorting of the pistachios by machine, it still takes the human eye to do the final inspection and sorting. Here the workers are removing pistachios that are broken, are not open, or that have discolored shells. Nothing from the processing is wasted. The epicarp (outer covering) that is removed from the nuts is spread back out under the trees to add nutrients to the soil. The nutmeats from nuts that are broken or that have discolored shells are used in candy and biscotti. Even the shells are used for mulch.
